Recipes

Chili Dog Casserole
2 (15 oz) cans chili with beans (I like Hormel Hot & Spicy)
1 (16 oz) package beef frankfurters (I prefer Ball Park)
10 (8 inch) flour tortillas (the fajita sized ones)
1 (8 oz) package Cheddar cheese, shredded

Preheat oven to 425 degrees

Spread 1 can of chili and beans in the bottom of a 9x13 inch baking dish. Roll up franks inside tortillas and place in baking dish, seam side down, on top of chili and beans. Top with remaining can of chili and beans, and sprinkle with cheese.

Cover baking dish with aluminum foil, and bake at 425 degrees for 30 minutes.

Good Ol' Bread (Yield 2 loaves)
Mix 3 cups of flour
1 1/2 tablespoons sugar
1/2 teaspoon salt.
In another bowl, combine
1 cup water
1/4 cup oil
1 egg.

Combine the above mixtures and mix in 1 tablespoon or 1 package of yeast.

Let rise until double in size (about an hour). Punch down and divide into two equal portions. Place each into a greased bread pan. Allow to rise again and bake at 400 for 12 minutes before turning the heat down to 350 until done. (about 15-20 more minutes - when it sounds hollow when thumped on the bottom, it's done.) Remove from pans and rub tops with a stick of butter. Cool on racks. For a softer crust, after rubbing with butter, loosely cover with wax paper or a small towel.

Can use this recipe to make hot rolls, hamburger buns and even pizza crust.
I usually use plain white flour. I have used a mixture of half white and half wheat flour, that bread is heavier/coarser.

3, 2, 1 CAKE
1 box Angel Food Cake Mix
1 box Cake Mix - Any Flavor
In a ziploc bag, combine the two cake mixes together and mix well. Store in a ziploc bag.

Directions for 1 serving.
For each individual cake serving, take 3 Tablespoons of the cake mix combination and mix it with 2 Tablespoons of water in a small microwave-safe container. Microwave on high for 1 minute!

Top with whipped topping and/or some fresh fruit. I keep a container of 'canned' frosting in the fridge just for these little treats.

Helpful Tips:
This recipe is called 3, 2, 1 Cake because all you need to remember is:
3 tablespoons mix,
2 tablespoons water,
1 minute in the microwave!"

Try various flavors of cake mix - the possibilities are endless! Just remember one of the mixes must be angel food.
