More March Recipes

Irish Soda Bread Scones
Mix together:
4 cups flour
2 TBS corn starch
1/4 cup sugar
1 1/2 tsp baking soda
1 1/2 tsp cream of tartar
1 tsp salt
In separate bowl, mix:
4 TBS butter
1 1/4 cups buttermilk or sour milk
Add: 1 cup raisins/dried fruit/nuts
Form into 1” thick round (not a ball, but flat on the top) and cut most of the way through into wedges. Glaze with 1 beaten egg
I bake mine on a sprayed pizza pan – can use parchment paper
Bake 400 25-30 or until golden.
Since I’m trying to use up odds and ends of baking supplies, I mixed ½ white and ½ whole wheat flour. Added currants, raisins, dried mixed berries, chopped dates, chopped apricots and a few chopped nuts. Also – didn’t have enough butter so used 2 TBS butter with 2 TBS sour cream.
You really can’t ruin this recipe, but you can make it a little to ‘heavy’!

Tomatoes and Cheese
2 lbs canned tomatoes, chopped, diced, sliced, stewed – whatever!
40 saltines crackers, broken
10 oz sharp cheese, grated
1 1/2 tsp dry basil
2 TBS sugar
1/8 tsp pepper
Parmesan cheese (for top of casserole)

Mix first 6 ingredients together in a casserole dish. Top with the parmesan cheese.
Bake at 400 degrees for 45 min. I cover the casserole dish for the first 30 minutes.
OPTIONS – Also good with diced pepperoni sausage or cooked crumbled Italian sausage.
Substitute shredded mozzarella cheese for the parmesan.
